De latte macchiato is een groot glas geschuimde
melk bevlekt met espresso. Een espresso macchiato is
daarom logischerwijs een espresso die met wat melkschuim
is bevlekt. Traditioneel wordt de macchiato
‘droog’ geserveerd. Dat wil zeggen dat het melkschuim
met een lepel op de koffie wordt gelegd zonder
dat die verdund wordt met melk. Het is echter
ook mogelijk om Latte Art® te schenken in een
espresso macchiato. Hierdoor wordt de macchiato
eigenlijk een mini cappuccino, omdat de espresso
door de warme melk wordt verdund.

Een andere variatie is bekend onder de naam cortado,
waarbij een espresso doppio (een dubbele shot
espresso) verdund wordt met wat warme melk en
een beetje schuim. Ook in de cortado is het mogelijk
om Latte Art® te schenken. Zowel voor de espresso
macchiato als voor de cortado geldt, dat je veel korter
de tijd hebt om een figuurtje te schenken. Goed
schuim is dan ook essentieel. Met Friesche Vlag Langlekker
melk kun je makkelijker het benodigde fluweelachtige,
fijne schuim maken.

Etching is de naam voor een versiertechniek die net
zo spectaculair oogt, maar minder moeilijk eigen te
maken is dan de schenktechniek die bij het appeltje,
het hartje en de rosetta aan bod kwam. Het heet
etching, omdat er met een soort van pen getekend
wordt in de koffie en het melkschuim. De twee figuren
die achtereenvolgens uitgelegd worden zijn de
Whirlwind en de Chocolate Swirl. Voor de eerste heb
je alleen espresso en geschuimde Friesche Vlag volle
melk nodig, voor de tweede ook chocoladesaus.

De mogelijkheden voor deze techniek zijn in potentie
eindeloos. Je kunt zoveel verschillende materialen
gebruiken als je wil en je hoeft je niet te beperken
tot de hier gedemonstreerde symmetrische figuren.
Konijntjes, spoken, smilies, kijk maar eens op
http://www.latteart.nl, dan zie je zo een paar voorbeelden.
Ook kun je andere hulpmiddelen gebruiken, zoals
witte chocoladesaus, karamel en verschillende kleuren
suiker. […]

Macchiato betekent bevlekt in het Italiaans. Bij een
latte macchiato wordt geschuimde melk daarom
bevlekt door espresso. Je kunt een latte macchiato
zo slap of zo sterk maken als je zelf wilt door er meer
of minder espresso in te schenken. Het belangrijkste
ingrediënt blijft echter de melk. Friesche Vlag volle
melk is hier bij uitstek geschikt voor, zowel dagverse
melk als Friesche Vlag Langlekker.

Het is heel makkelijk om te variëren op de latte macchiato.
Je kunt bijvoorbeeld een deel van de melk
vervangen door kokosmelk. Hoeveel kokosmelk je
wil gebruiken hangt uiteraard af van je eigen smaak,
maar het is wel hele vette melk. Een kwart tot een
derde van de melk vervangen door kokosmelk is voldoende.
De Friesche Vlag volle melk en de kokosmelk
worden samen verhit. Als finishing touch zou je
dan wat kokossnippers bovenop kunnen strooien, of
een tekening met chocoladesaus kunnen maken (zie
de etchings). In het laatste geval heb je een koffiebounty
gemaakt.

Koffie die met liefde gemaakt wordt, het wordt vaak
beweerd en soms zelfs beloofd als je een horecagelegenheid
binnenkomt. Het hartje dat op de achterkant
van deze bladzijde wordt gedemonstreerd laat
geen twijfel bestaan: als je dit geserveerd krijgt, dan
moet de koffie alle liefde hebben gekregen.

Koffie verkeerd

Net als bij een cappuccino heeft de café latte espresso
als basis. Een café latte bevat echter minder
schuim en meer melk dan een cappuccino. In Frankrijk
noemt men een koffie met veel melk een café au
lait en hier in Nederland spreken we traditioneel van
een koffie verkeerd. Op z’n Italiaans is het een café
latte en die naam zie je meer en meer op de Nederlandse
menukaarten verschijnen. Van een koffie verkeerd
kan eigenlijk niet meer gesproken worden als
je een hartje voorgeschoteld krijgt.

Valentijn

Er zijn verschillende redenen te verzinnen waarom je
een hartje in je koffie zou willen schenken. Aan de
ene kant kun je daarmee laat zien dat de koffie met
liefde gemaakt en perfect van smaak is, maar je kunt
er natuurlijk ook een speciaal iemand mee verassen.
Op Valentijnsdag is het een leuk idee om wat rode
(eetbare) kleurstof aan de Friesche Vlag volle melk
toe te voegen, zodat je een roze hart krijgt. Veel
romantischer kun je de koffie niet serveren. […]

De cappuccino dankt zijn naam aan de kleur van de
pij van Kapucijner monniken. Als de cappuccino
goed gemaakt is dan wordt het witte melkschuim
omrand door het bruin van de cremalaag van de
espresso. Tenzij er expres voor een ‘droge’ cappuccino
gekozen is, is een volledig witte kop op de cappuccino
meestal het gevolg van een gebrekkige
schuimtechniek. Het schuim wordt bovenop de koffie
geschept met een lepel, en om dan toch nog iets
van een de karakteristieke cappuccinokleur te krijgen
wordt er cacaopoeder bovenop gestrooid.
Cacaopoeder is te donker van kleur, doet afbreuk
aan de smaak van de koffie en heeft als voornaamste
eigenschap dat het de schuimlaag aanvreet. Dat
heeft daar dus niets te zoeken.

Ochtendkoffie

Cappuccino is net zo Italiaans als spaghetti en chianti,
maar Italianen drinken het niet de hele dag door,
zoals we in Nederland gewend zijn. Sommige mensen
zeggen dat je na elf uur geen cappuccino meer
mag drinken, maar die regel gaat alleen maar op als
je vroeg bent opgestaan. Espresso is voor veel mensen
te sterk om op een nuchtere maag te drinken,
ook voor Italianen. Ze beginnen dus ‘s ochtends met
een cappuccino of een espresso macchiato en gaan
daarna pas over op de espresso.

Friesche Vlag volle melk en Langlekker

Halfvolle en magere melk zijn minder geschikt voor
cappuccino, omdat ze te weinig vet bevatten. Het
vet in de melk is nodig om goed schuim te kunnen
maken. Friesche Vlag volle melk en Friesche Vlag
Langlekker volle melk hebben precies de juiste vet
eiwit verhouding om een echte Italiaanse cappuccino
te maken.
